Ingredients

  • fresh cranberries - 1 lb. (500g)
  • apples - 2 (peeled & chopped)
  • honey - 4 tbsp.
  • water - scant ½ cup (100ml)
  • hazelnuts - ½ cup (75g)
  • puffed quinoa - 1.4 oz. (40g)
  • coconut chips - ¼ cup (15g)

Preparation Instructions

  • 1. Heat the oven to 360°F (180°C).
  • 2. Place the cranberries, chopped apples, 1 tablespoon of honey and 50ml water in a saucepan. Gently bring to the boil. Cook for 10 minutes until the cranberries start falling apart.
  • 3. Scoop the mixture into 4 oven-proof dishes of 3-4 inches (8-10cm) diameter.
  • 4. Chop the hazelnuts coarsely, mix with the puffed quinoa and mix with 1 tablespoon of honey. Then spread the mixture over the fruit in the dishes.
  • 5. Bake in the oven for 20 minutes.
  • 6. Serve hot, garnished with coconut chips.
