Ingredients

  • avocados - 2 (halved
  • stone removed) -
  • medium tomato - 1
  • lime - 1 (zest & juice)
  • black beans - 1 cup (184g) (drained)
  • garlic clove - 1 (crushed)
  • coriander - 2 tbsp. (chopped)
  • smoked almonds - 2 tbsp. (chopped)

Preparation Instructions

  • 1. Heat the grill to high heat or prepare the barbecue.
  • 2. Finely chop the tomatoes and combine with zest of whole lime and juice of ½ lime. Mix in the chopped coriander and season with salt & pepper.
  • 3. In a separate bowl, mix together the black beans and crushed garlic. Season with salt and pepper.
  • 4. Place the avocados on the grill or BBQ and cook for about 3 minutes or until slightly browned.
  • 5. To serve fill the avocado halves with black beans and top with the tomato salsa, almonds and more coriander.
