Ingredients

  • small onion - 1 (chopped)
  • garlic cloves - 2 (finely chopped)
  • baby spinach - 1 cup (200g) (chopped)
  • eggs - 4
  • egg whites - 5
  • plant milk - ⅓ cup (80ml)
  • baking powder - 1 tsp.
  • light feta - ⅜ cup (55g) (crumbled)
  • fresh herbs of choice (such as basil -

  • chives -
  • rosemary) - 2 tbsp. (chopped)
  • coconut oil - 1 tsp.

Preparation Instructions

  • 1. Preheat the oven to 375°F (190°C). Grease a muffin tin with ½ teaspoon of coconut oil.
  • 2. Heat a non-stick pan with ½ tsp. of coconut oil over medium heat. Cook the onions and garlic until soft. Add the spinach and 1 tablespoon of water and cook until wilted. Once cooked, set aside.
  • 3. Whisk together eggs, egg whites, milk, baking powder, and season with salt and pepper. Stir in the spinach mixture and add the crumbled feta cheese.
  • 4. Divide the egg mixture evenly between 12 muffin cups. Bake until golden brown and firm to the touch, about 25 minutes.
