Ingredients

  • ripe avocados - 2 (halved
  • pit removed) -
  • lemon - 1 (juiced)
  • sun-dried tomatoes - 1 tbsp. (chopped)
  • cherry tomatoes - 4 (diced)
  • small red onion - ½ (diced)
  • dried herbs de Provence - 1 tsp.
  • parsley - 2 tbsp. (chopped)
  • black olives - 8 (chopped)
  • feta - 1 tbsp. (crumbled
  • optional) -

Preparation Instructions

1. Place the avocado and lemon juice into a large bowl and mash it up with a fork. Add remaining ingredients (apart from the feta) and mix well. Season with salt and pepper.

2. Crumble the feta on just before serving.
