Dairy Free Vegan Vegetarian Breakfast
1. In a medium pot, combine the oats, water, pumpkin puree, ground cinnamon, nutmeg, cloves, vanilla extract and grated apple.
2. Cover and bring to a boil, then reduce heat, and simmer for around 20 minutes, stirring frequently, until cooked through.
3. Stir in the honey, allow to cool, and portion out into 4 bowls or containers. Top with pumpkin seeds.
4. This is perfect for a meal prep breakfast and can be reheated in the microwave with a splash of milk, or water.
