Ingredients

  • watermelon - 3 cups (600g) (cut into cubes)
  • red onion - ½ (cut in half rings)
  • mint - 2 handfuls (chopped)
  • black olives - 3 tbsp. (sliced)
  • low fat feta cheese - scant 1 ½ cup (200g) (cubes)

Preparation Instructions

1. Put all the ingredients in a bowl and gently toss until everything is mixed.

2. Serve as a side with BBQ meats or on it own as a refreshing light salad.
