Easy Vegetarian Pommes Anna - Under 400 Calories
Pommes Anna is the ultimate French potato cake made with thinly sliced potatoes, lots of butter, salt, and pepper, featuring crispy edges and a soft center for a stunning presentation when flipped out.

Make clarified butter: Melt the butter in a saucepan or microwave. Set aside for 5 minutes until milk solids settle. Scrape off foam, then pour clear golden butter through a sieve into a jug, discarding solids.

Preheat oven to 200ยฐC / 400ยฐF (180ยฐC fan-forced). Brush the base of a 26cm / 10" cast-iron skillet with 2 tablespoons of clarified butter.

Peel potatoes and slice 2 or 3 at a time using a mandolin to 1.5mm / 0.06" thick. Sort slices into small, medium, and large sizes. Do not rinse in water.

Build the first layer: Place a medium slice in the center, then spiral around it with overlapping slices. Add a second spiral with larger slices to cover the base evenly. Tuck small slices in the center gap. Brush with one-third of the clarified butter and season with one-third of the salt and pepper.

Repeat the spiral pattern for two more layers, brushing with clarified butter and seasoning each layer.

Place a cartouche (round piece of baking paper) on top. Bake for 70 minutes.

Remove cartouche and bake another 30 minutes until top and edges are deep golden and crispy.

Rest for 10 minutes on the counter. Flip onto a plate and serve immediately.
